After walking the Tidal Basin, barbecue tends to sound like a very good idea.

Every spring in Washington, DC, the city pauses for a few weeks of pale pink trees and long walks around the Tidal Basin.

Visitors come for the blossoms during the National Cherry Blossom Festival, but the day usually ends the same way: people start looking for somewhere good to eat.

We believe barbecue fits that moment perfectly. After a few hours walking the monuments and the water, most people are ready for something warm, smoky, and meant to share.

Cherry blossom season brings a different rhythm to the city. Families spread out on the grass, friends wander between monuments, and restaurants start filling up with people who’ve been outside all day.

At 2Fifty Texas BBQ, we feel it early. The smokers are already running when the morning crowds head toward the blossoms, and by the afternoon, visitors start arriving hungry from a long day in the city.

It’s one of our favorite weeks of the year.

We believe barbecue, like cherry blossoms, rewards patience.

Our brisket cooks for roughly fourteen hours in wood-fired offset smokers. Oak splits go into the firebox throughout the day to keep the heat steady and the smoke clean.

By the time the afternoon crowds arrive from the Tidal Basin, the bark has set and the brisket is ready to slice.

Good barbecue takes time, just like the bloom.

The cherry blossom season in DC only lasts a short time. The petals fall, the crowds move on, and the city returns to its usual pace.

But while the trees are blooming, it’s a good excuse to spend the day outside and finish it with a great meal.
