The story starts in Riverdale Park, at a farmers market where neighbors gathered around the smoke and helped turn an early idea into a lasting smokehouse.
That same work came to K Street. Mount Vernon Triangle is a busier, quicker kind of block, and the smokehouse keeps its own pace inside it: wood, fire and the patience the meat asks for.
The fires start early here too, and the food comes off the smoker until it runs out, carrying the Salvadoran hospitality it was built on.
