For months, we’ve been getting the same question at the counter, in DMs, and from regulars who know the rhythm. When is Pork Belly Week coming back?
Now it is.
Starting Wednesday 28 through Sunday, February 1, Pork Belly Week returns to 2fifty. Five days. One cut per day. One direction at a time.
This is not a special we slide onto the board lightly. Pork belly asks for attention. It asks for patience. And it asks for a pitmaster who knows when to wait and when to move.
For Fernando González, this week is about listening to the meat. Letting the fat render on its own time. Letting the smoke settle in slowly. No rushing. No shortcuts. When it’s right, you feel it before you taste it.
That’s why Pork Belly Week exists. And that’s why it only comes around when we’re ready to do it right.

We don’t scale Pork Belly Week to last all day. We cook it to be right.
That means smaller batches, tighter windows, and attention at every step. It also means timing matters. Earlier is always better, especially if you have a specific dish in mind.
Winter helps too. Shorter lines. More time at the counter. More room to watch the cutters work.
