In February, we started serving the Brisket Combo once a week. Just a simple tray built around smoked brisket and the kind of sides that make a good barbecue plate feel complete.
People noticed quickly.

The heart of the tray is the same brisket we’ve always cooked at the smokehouse. Each one goes into the smoker early in the morning with nothing more than salt, pepper, and oak wood. It stays there until the bark sets dark and the fat has rendered slowly enough that the slice bends before it breaks. As Fernando likes to say, you learn to trust your hands and the feel of the meat as much as any thermometer.
From there, the plate comes together in a way that just makes sense.
A pile of crispy fries brings a little crunch. Thick slices of bread sit on the side, ready to catch the brisket juices or hold a few slices if you decide to build your own bite. It’s simple food, but when the brisket is right, simple is exactly the point.
