Walking up to the counter at 2FIFTY for the first time, it's easy to freeze. Brisket by the pound, ribs by the bone, sandwiches, sides that range from mac and cheese to esquites. Where do you even start? Here's the short answer: start with the meat that took the longest to get here, then build out from there.

Start With the Brisket

If it's your first tray, get the brisket. It's the cut that tells you everything about how we cook: low, slow, and entirely over oak, no shortcuts and no gas. You'll see the bark first: dark, peppery, almost bitter-sweet from hours of smoke. Underneath, the meat should pull apart with barely any resistance. Ask for a mix of moist and lean if you're not sure which you prefer, though most first-timers end up leaning moist. This is the cut that sets the standard for the rest of the menu, so it's the one worth tasting before anything else.

Build Your Tray: One Meat, One Side, One Surprise

Once the brisket's on your tray, the rest is about balance. A simple rule that works for almost anyone: one meat, one classic side, one side that surprises you.

For the meat, brisket covers you, but pulled pork and ribs are the next two worth trying on a return visit. For the classic side, mac and cheese or coleslaw does the job: familiar, no risk. Then take a chance on the side that carries a little more of who we are: esquites or crispy plantains. They're small details, but they're where our roots show up on the plate without needing an explanation.
