A good turkey sandwich should taste like barbecue, not like a backup option. The reason this one works is balance. Turkey carries smoke differently than brisket or pork. It needs a lighter hand and real control on the pit, especially when you’re cooking over wood-fired offset smokers the way we do every day in Riverdale Park. The meat comes out tender and sliceable, with enough smoke to remind you where it came from, but not so much that it buries the bird itself. Then the sides do their job. Pickles bring acid.
